Our story

Since 2017, we have been travelling Indonesia’s regions to learn its dishes the way they were meant to be made, from the cooks who still make them, and proudly bringing the ones that were slipping away into our restaurant in Ubud, Bali. The food and drinks we serve are lesser-known and often not found outside of their regional origins.

Nusantara restaurant is part of Locavore Group, the family behind Locavore NXT.

How Nusantara began

Locavore opened its doors in Ubud in 2013, built on a single, stubborn idea: to cook only with what Indonesia itself can grow, catch and forage. A few years later, in 2017, that idea found a new home. Ray Adriansyah and Eelke Plasmeijer, the chefs behind Locavore, opened Nusantara, with Putu leading the kitchen as head chef. It kept the local-ingredient-only philosophy at its heart, then took it further, turning fully towards something Locavore Group had long wanted to tell: the stories of Indonesia’s many regions.

Nusantara means archipelago in bahasa Indonesia. An estimated 17,000 islands, over 1,300 tribes, around 700 local languages and some 3,000 cuisines. That diversity is what makes the country what it is.

We follow each dish back to its roots, cooking it with the ingredient, the technique and the serving style it was always meant to have. Then we share it family-style across the table, the way Indonesians have eaten for as long as anyone can remember.
