Most things that ferment turn sour. Tape ketan is one of the rare ones that actually turns lightly sweet. We use this much-loved Indonesian ferment in our desserts.

Kelor (moringa) grows almost everywhere here, often along garden fences, mostly unnoticed. And es teh (iced tea) is the everyday table drink, poured alongside almost every meal. Our Es Teh Kelor brings the two together.

In Indonesia, one of the most common ways to ask after someone isn’t ‘how are you?’ It’s ‘sudah makan?’ Which literally means ‘Have you eaten yet?’ It sounds like a question about food, but it’s a small way of saying I’m thinking of you; are you looked after.

Teaming up with Into the Wild, Chef Putu and the Nusantara team cooked in the jungle for our bartender community invited from all over Asia Pacific.
Since 2017, our menu and hospitality have earned recognition across Asia. We take it less as an achievement than as encouragement to keep searching for the recipes and regions still waiting to be brought back.

Behind the recipe research is our Head Chef Putu, whose curiosity hasn’t faded since he was taught the culinary secrets in his village’s temple kitchen. For Nusantara, he explores recipes from the unknown corners of Indonesia’s archipelago to study cooking techniques, bringing forgotten dishes to life.
Bu Wayan is our Restaurant Manager, and grew up cherishing the connection found in family mealtimes. At Nusantara, she leads the kitchen team and hosts our guests, in charge of our warm hospitality. Occasionally, Wayan is involved in the brainstorming and researching the dishes served at our restaurant.
